In addition to our regular produce vendors, we have three events at the market today: Lois Reid and Jim Dixon will play folk music for us; Janean Bowen will be showing some special recipes using honey from our own “honey man,” Chuck Elias; and Christina Lee will be doing a fundraiser for Heather Simpson, who has acute leukemia. For a free will donation, you can have regular or blueberry pancakes, orange juice, and coffee. Lynn Hoffman, our market manager, has registration forms for the July Bundle Give Away. She can also assist you if you need to use your credit, debit, or SNAP card at the market. We also accept Chamber of Commerce gift cards, Kansas Senior Farmers Market Nutrition Program coupons and coupons from the Atchison Community Health Clinic. And, of course, you may purchase Atchison Farmers’ Market gift certificates to give as gifts to your family and friends. You have all heard about the demise of many bees. Without honey bees, most of our vegetable and fruits would not be pollinized. We have local vendors who are trying to keep the bees healthy. Honey is nature’s energy booster. The benefits of honey go beyond its great taste. A great natural source of carbohydrates which provide strength and energy to our bodies, honey is known for its effectiveness in instantly boosting the performance, endurance and reduce muscle fatigue of athletes. Its natural sugars play an important role in preventing fatigue during exercise. The glucose in honey is absorbed by the body quickly and gives an immediate energy boost, while the fructose is absorbed more slowly providing sustained energy. It is known that honey has also been found to keep levels of blood sugar fairly constant compared to other types of sugar. Here is a recipe that uses honey and can be kept on hand for use in salads, on baked goods, and as a snack. Honeyed Pecans
Yield: 1 cup; hands on time, 10 minutes, total time: 55 minutes
Ingredients
1/4 cup honey
1 cup pecan halves
Parchment paper
Cooking spray
1 tablespoon sugar
1/4 teaspoon kosher salt
Pinch of ground red pepper
Preparation
Preheat oven to 325°. Microwave honey in a bowl at HIGH 20 seconds. Stir in pecan halves. Coat a parchment paper-lined jelly-roll pan with cooking spray; spread pecans in a single layer on pan. Combine sugar, salt, and a pinch of ground red pepper; sprinkle over pecans. Bake 15 minutes or until toasted, stirring after 8 minutes. Cool completely; break into pieces. From Southern Living
