Summer Festival at the Market!

Atchison  Farmers’ MarketFresh, Friendly, LocalMarket E-Newsletter, Saturday, August 6, 20168 a.m. to 12 noon It is the first Saturday in August and time for our Tomato-Corn Festival.  Susan Turnbull and Janean Bowen will have some great recipes (and tasting opportunities) using local tomatoes and corn.  And the Salsa Contest will take place during the morning.  Bring your homemade salsa – mild, medium, or unusual ingredient(s) – by 9 a.m. and the market customers will sample and choose their favorite in each category.  The winners will be announced and receive prizes later in the morning. Last minute change to our festivities.  Due to several musicians being out of town, the Atchison Jazz Express will not perform at the Market this Saturday.  But, we have asked for a raincheck and hope they will be kind enough to set one up for us. We have a winner for our August Bundle Give-Away:  Pam Goodman.  She will receive the bags of produce and other items donated by our vendors at 10 a.m. It is the start of a new registration period for Bundle-Give-Away – for September.  Come to the Long View booth today as Lynn Hoffman will not be at the Market this weekend. We can swipe your SNAP card for double buying power (at the Long View booth this weekend).  We also accept Atchison Farmers’ Market gift cards and Chamber of Commerce gift cards.  Qualified vendors accept Kansas Senior Farmers’ Market Nutrition Program coupon.  As of Tuesday, there were still five KSFMNP booklets still available at the Atchison Salvation Army.  Check with the Northeast Kansas Area Agency on Aging if they have any. Recipe of the Week In keeping with our Tomato-Corn Festival, here is an easy recipe using locally grown tomatoes, corn and local honey.  Sorry, the avocadoes and limes are not however! Grilled Corn, Avocado and Tomato Salad with Honey Lime Dressing:

  • 1 pint grape tomatoes

  • 1 ripe avocado

  • 2 ears of fresh sweet corn

Remove husks from corn and grill over medium heat for 10 minutes. The corn should have some brown spots and be tender and not mushy. Cut the corn off the cob then scrape the cob with the back of your knife to get the juices. Set aside and let cool. Slice the tomatoes in half. Dice the avocado.

Honey Lime Dressing:
  • Juice of 1 lime

  • 3 tbsp vegetable oil

  • 1 tbsp honey

  • Sea salt and fresh cracked pepper, to taste

  • 1 clove garlic, minced

  • Dash of cayenne pepper

Add all the dressing ingredients in a small bowl and whisk to combine. Set aside.   Combine the sliced tomatoes, avocado, and grilled corn and honey lime dressing and mix gently so everything is evenly coated. Be careful not to mash the avocados. Let the salad sit for 10-15 minutes to let flavors mingle. Enjoy.
