Trina Earl, who is one of our regular vendors, will be at the market with her son, Hunter, this Saturday. They will bring baby animals for a petting zoo: a mini pony, baby pigs, rabbits, a goat, and sheep. They will be at the event area under the 5th Street viaduct. We also welcome the Atchison Aviator 4-H club, who will have a bake sale. Come support these young folks who are working on their 4-H projects. We encourage you to attend the Juneteenth celebration this weekend. It is a very important occasion for our entire Atchison community. Special: Watch for a press release in the GLOBE this Saturday. The Atchison Farmers’ Market will launch a special program to allow more customers to benefit from our fresh, local produce. It is called Market Match. The launch will take place next Saturday, June 20, at the Market. More will be announced next week! Lynn Hoffman, our market manager, has registration forms for the July Bundle Give Away. She can also assist you if you need to use your credit, debit, or SNAP card at the market. Many of our vendors have Swiss chard available. Known for being one of the most nutritious vegetables in the world, Swiss chard has numerous health benefits. Positively impacting blood sugar, working as an antioxidant, and supporting bone health, what’s not to love about this delicious green? Here is an easy recipe reminiscent of traditional lettuce salads. Warm Bacon Vinaigrette Swiss Chard Serves 4 (serving size: about 1/2 cup) Ingredients 2 slices applewood-smoked bacon   2 teaspoons cider vinegar 1/4 teaspoon freshly ground black pepper 6 cups chopped Swiss chard Preparation Heat a medium nonstick skillet over medium heat. Add bacon to pan; cook until crisp. Remove bacon from pan; crumble. Remove pan from heat. Add vinegar and freshly ground black pepper to pan, stirring with a whisk. Pour vinegar mixture over Swiss chard; toss.
