There are all kinds of activities going on, culminating with the wonderful fireworks that are accompanied by music. It is always a tremendous finish to a great weekend. Nothing could be more appropriate than to feast on local produce this weekend. Show your out-of-town guests what wonderful vegetables and products can be found at your local Atchison Farmers’ Market. Remember, we are on the northwest corner of the 7th and Kansas parking lot, across from the post office, today. We will have entertainment by Dixon and Reid (R2D). Also, don’t forget that now we are able to accept credit, debit and SNAP cards. If you would like to use your card, please go to our Market Manager, Lyn Hoffman, who is located on the street side of the market toward the middle. She will be able to scan your card for the amount you wish to use at the Market. You will be given wooden Atchison Farmers’ Market tokens to use at any of the vendor stalls. We also accept Chamber of Commerce gift cards, “Walk Kansas” gift certificates, Senior Nutrition Program coupons, and, of course, our own Atchison Farmers’ Market gift cards. Other vendors may be present also. Recipe of the Week: A delicious, simple dressing for summer salads. Shallot Vinaigrette Combine in a jar: 1 finely chopped shallot 2 tablespoons fresh lemon juice 1 tablespoon unseasoned rice wine Add: kosher salt and freshly ground pepper. Let sit 20 minutes Add 1/3 cup olive oil and cover. Shake to combine.
